Adam: "I have a coffee infused panna cotta with a coffee liqueur, poached pear, a mascarpone whipped cream, and a reduced coffee liqueur syrup."



"Young man, I'm gonna be honest. Visually, it looks a mess tonight. There's no way on earth that panna cotta's ever going to set in 45 minutes. What was going through your mind?"


Adam: "Yeah. With a couple minutes left, I saw the panna cotta and knew I was probably in trouble, and so I definitely got ambitious. I just wanted to kind of convey my creativity and my ideas. And so technique wasn't fully there."


"Shall we? The actual flavor of the panna cotta is delicious. Thank you. But you know and I know it's not set properly."


"Poached pear, beautifully done. Cream, slightly sloppy, but, yeah, it's another hit from up on the balcony. This dessert definitely took you down."


"Yeah. I mean, for me, there's so many technical issues that are hard to get around, but I love the flavor of the pear, and there's not a lot of sweetness here, which I enjoy because the bitterness of the coffee comes through."


"A panna cotta should eat like a firm jell o. And this, you know, you can drink it like a milkshake, and that's no good."


"It needed ten more minutes."
