Coffee Spiced Lamb Tartare with Crispy Plantains

Drawing on the Coffee gelato flavor, Brittany made a coffee spiced lamb tartare served with crispy plantains. The coffee was incorporated by rubbing it into the lamb and also embedding it in a pickled chili garnish. Brittany had been on the bottom of the previous challenge and was focused on recovery: so far in this competition I've been on the bottom and I don't like to lose, so I focus more on the coffee notes because it's a savory dish that needs to pair well with the gelato.
Despite the intention, the coffee flavor did not register clearly at tasting, and raw onion overwhelmed the other flavors.
