Anthony: "pot liquor. And I use raw collards to make a chadon beni and kimchi... making this black-eyed pea fritter. Almost like a hush puppy there." Anthony: "In the collard green pot liquor, you have a collard green chadon beni and kimchi and black bean fritter with tasso ham. The collard greens came out tender, so I was happy about that." Anthony: "I was trying to just make the collards as the main character in the whole entire dish." Anthony: "I could have made the fritter a little bit bigger, especially because it was studded with the tasso ham." Anthony (prep): "Add in the collards, pop that in the pressure cooker... I added salt, smoked bacon, and tasso ham." Anthony: "I know that Tristan's gonna be more critical on anything that I make."
Bottom three. {Judge}: "Did you think it was an entree? No. Not even close." {Tristan}: "I do like the heat. This is a fantastic side." {Tristan}: "That's too salty." {Tom}: "Really salty." {Tristan}: "The biggest part of it was it's so salty." {Tom}: "Listening to Anthony think that you could just put a pot of greens together and say it's an entree just blows my mind." {Judge}: "With one very small fritter on the side." {Tom}: "You can make collards the star without it being the only thing on the plate." {Judge}: "It was missing an anchor."
