Compressed Cantaloupe with Whipped Ricotta and Mascarpone — second half, submitted with very little time left. Technique: Compression. Chris Morgan: So this is compressed cantaloupe, and then you have, like, a whipped ricotta and mascarpone. Wiley joked that given how many dishes the judges had eaten, a single piece of melon with a small amount of cream would have been more than enough.
