Compressed Cantaloupe with Whipped Ricotta and Mascarpone — second half, submitted with very little time left. Technique: Compression. Chris Morgan: So this is compressed cantaloupe, and then you have, like, a whipped ricotta and mascarpone. Wiley joked that given how many dishes the judges had eaten, a single piece of melon with a small amount of cream would have been more than enough.
Wiley Dufresne: Now, you could have given us just each one piece of melon, a little bit of that cream. Michael Cimarusti: You know how many dishes we've eaten?
