Tomato Salad Compressed in tom kha (a spiced chilli paste) — second half. Technique: Compression. Buddha Lo: And my second dish — it's a tomato salad. It's been compressed in tom kha. Buddha presented this alongside his blackberry plates during his run to first place. Padma noted that tom kha should carry heat and found the level appropriate.
Padma Lakshmi: Tomkh is supposed to have a punch of heat. And to me, it was very appropriate and delicious. Michael Cimarusti: Well done.
