Sweet Hominy (Canjica) with Charred Corn Husk Ice Cream and Toasted Brazil Nuts 


A toast to Sherry's mother and the farm where she grew up in Brazil. 


While prepping: "Dessert. This is a note to my mom, to the farm where I grew up in Brazil. I want to do a sweet hominy dish finished with corn ice cream. It started at my mom's kitchen. I love that the last course is the most wholesome one." 


At service: "My uncle used to grow a lot of corn during the summer. I wanted to honor the corn, so I charred the husk and turned it into an ice cream finished with toasted Brazil nuts." The ice cream melted before serving: "We scooped it way too early. I'm hoping the flavor will carry this dish through. I wish my ice cream was ice cream." 


Final table: "My mom used to make a dish called canjica, and that was a version of what you got today. Once it hit that hot porridge, it just started melting."

{Judge}: "I really love the flavors. The berries and the nuts and the hominy. I just think the way she plated it was a mess." 


{Guest}: "When she said ice cream, I thought I missed something." 


Final table: {Judge}: "I loved the layers of texture. I loved how pronounced the corn was. The ice cream was a promise that wasn't delivered on." 


{Judge}: "Other than the ice cream, I really enjoyed eating the dish. I thought it was interesting, and I really felt like we got a really good piece of you." In deliberation: "Her dessert was a big miss. She made ice cream that melted."
