Green team dinner for the Cracker Barrel quickfire, plated with creamed corn and a lemon pepper finish. Jen reached for teammate Duyen’s already-made batter to save time, then immediately discovered it was wrong for the oysters. {Jennifer}: "I’m using Duyen’s batter to fry my oysters. Duyen’s batter was really great for her fried green tomato, but for these oysters, it kind of made everything too wet. Adding some cornmeal to get some texture." The cornmeal addition helped on the fly, but the foundation of the batter remained too liquid. Judges flagged the texture and offered a teaching note rather than a verdict.
{Judge}: "What’s in the batter?" {Judge}: "I think, Jen, had you made your own cornmeal batter, it would have gotten more crispy, but it just kind of all felt a little bit wet."
