Cranberry and Orange Spice Christmas Cake
Nicole: "I actually decided to do a cranberry orange spice Christmas cake. It is inspired by Christmas gatherings with my family. That's a huge thing for us. There's twelve cousins. We're all about the same age. We still love getting together as adults. Everyone brings their favorite thing. I'm known as the baker. So they're always like, what's Nicole bringing? And last year, this is what I brought."
Voice Over: "When she's not immersed in crafting leather bound journals as a skilled artisan, Nicole is embellishing her bakes with fresh berries foraged from the local forest. Nicole's holiday themed spice cake will be coated with cranberry cream cheese icing and candied orange peels."
Paul Hollywood: "Wow, the cranberries are really tart. I mean, you go, oh, you really wince when you hit one, which is quite nice against the fruit as well, the citrus."
Prue Leith: "That's perfectly soft."
Paul Hollywood: "Yeah. Great. Well done, Nicole."
