Cranberry and Walnut Rye Bread Rolls

Ian's making cranberry and walnut rye bread rolls with a hint of orange zest. He's the only baker to use a sourdough starter to form his dough. Iain said: "No, no, I made it. It's about five months old." When asked if he'll keep it: "Yeah, it's going to keep it, yes. Yeah. It's like a little pet. You got to feed it." About storage: "Normally I leave it in like a closet in my house."
Paul Hollywood commented: "It's well baked. You got a lovely flavor. The orange is coming through with the cranberry. That is a nice roll." Mary Berry added: "It's a good flavor. Thank you." Paul also noted: "It's a nice texture inside, isn't?"
