A crisp brick pastry tartlet with wasabi yogurt in the base, topped with cured trout cut into a generous dice for bite, pickled kohlrabi, marinated trout roe and shredded shiso. Martin described the assembly: 'A little brick tartlet, some wasabi yogurt in the bottom, cured trout, pickled kohlrabi, some marinated trout roe and shredded shiso on the top.' He chose a larger dice deliberately: 'Quite a large dice, really. Just you get some nice bite through there as well.'
VETERAN ROUND: Veteran Simon Rogan ranked this canape fourth of the four, noting it was 'slightly on the big side and just less elegant.' No numerical score was given; the canape ranking was held in reserve as a tiebreaker.
JUDGING ROUND: Martin did not advance to the judging round.
