For her pre dessert, Amber is making honey and lemon curd.


Amber: "The title for my dish is Cures for the Common Cold. And it is inspired by Princess Campbell, who was one of the first black female nurse ward sisters in Bristol. And she also got an MBE for her pioneering work for social housing."


Amber: "So I'm using slightly medicinal flavors. So I've got a honey and lemon curd. Then I am churning a blackcurrant sorbet. I've got a black currant meringue and also blackcurrant meringue tuille."



Simon Rogan: "It's really nice. Not too sweet. That curd at the bottom is delicious. Nice and refreshing."
