Dan: "I am doing the aromatic flavors of a Thai curry."
Paul Hollywood, mock-horrified: "What are you thinking?"
Prue Leith: "I think I find it really interesting."
Voice Over: "Dan's Thai inspired creme caramels was flavored with coriander root, galangal, lemongrass and lime."
Paul Hollywood: "How's the sweetness going to work with the Thai spice?"
Dan: "I've worked quite hard to get the amount of aromatics in there because if you put too much and it becomes quite bitter."
Judges comments
Prue Leith: "It's got the wobble which I love. You're suffering from signals that it is underbaked.

Prue Leith: "I love that texture."
Paul Hollywood: "That's beautiful. It really is. You've got your flavors spot on. I can taste the lemongrass. It's very nearly perfect, but it doesn't look perfect because they collapsed. Their flavor is lovely."
