Sean: "I don't know if I know what I'm doing ... more just improvising here and there. For my babka, I'm making a dates and coconut babka."


Voice Over: "Inspired by his parents' date tree and one of his favorite cakes, Sean's date and coconut babka, will be decorated with a glaze and toasted pistachios."

Paul Hollywood: "Looks a little dark, doesn't it? Definitely a little sort of valley in the middle, isn't there?"


Sean: "Yeah. I think it's overproofed a bit."


Paul Hollywood: "You do manage to achieve a decent swirl inside. I think you do have a texture of brioche, which is very light, and it's very good. It is slightly overproof, so you've had that rise and fall, and I think you burnt it. But I do like the flavour."
