Deconstructed Ambrosia Salad

Justin admitted upfront that he was not a fan of ambrosia and would learn to love it that day.
{Justin}: "I’m gonna learn to love it today. Baking cakes in that short amount of time, there’s so many things that can go wrong. So chilled fruit salad. Lots of ways you can shake that tree." His version assembled a cherry granita at the base, roasted pineapple, brown butter walnuts, toasted coconut, raspberry whipped cream, and brown butter marshmallows. He turned to liquid nitrogen to lighten the texture without ever having used it before. The result was frozen so cold the flavour was muted, and Justin was eliminated.
{Judge}: "There’s just something missing in bringing it all together."
{Judge}: "The ambrosia, the ratios were off. It wasn’t enough cream to all the different things."
{Judge}: "That was a hot mess, actually a cold mess. Texturally, there was really nothing there. It was all crunch."
{Judge}: "Justin put everything in liquid nitrogen, and when you freeze things to that temperature, you dampen the flavor. Just too damn cold."
{Judge}: "Liquid nitrogen is tricky. The dessert was so cold, you couldn’t taste it."
{Judge}: "I had the same issues. It was just hard to taste."
{Judge}: "There should have been a gap between plating and serving."
{Judge}: "All the components just were completely separate and also tamped down by the temperature."
{Judge}: "For that reason, it didn’t even give me ambrosia."
{Judge}: "Justin, please pack your knives and go."
