Deconstructed Sea Bass Taco

Seared sea bass with avocado and coriander crema, charred corn salsa (with tomato and caramelized pineapple), tortilla strips and a chipotle beurre blanc sauce.
Gareth: "I am making for you memories of a fish taco. So it is seared sea bass on an avocado crema, charred corn and chipotle beurre blanc with some homemade tortillas."
Gareth: "I was hoping to transport you to the beach and get all the flavors of my time in Latin America and Southern California. So I have lived around the world and have a Welsh dad and a mom from the South Pacific. So just lots of different influences of cuisines."
Gareth: "They met in the Midlands in the UK."
Gareth: "I think it went well. I was really happy with their comments. They really seem to get the concept, and overall, I'm pretty happy with it."
Grace (during cook): "He's making a sea bass taco. He's deconstructing it to elevate it. So instead of that original design classic, he's taking it all to pieces. He clearly wants to make it look pretty. But now we have taco strips, avocado crema, and we have seared sea bass. Let's hope we can still get the tastes and sensations of being on a Mexican beach. It's all different parts of the plate. It might just fall flat."
Anna (tasting): "Gareth, your sea bass is nicely cooked. The chipotle beurre blanc has got an excellent acidity to it. Your charred corn salsa, it's just a perfect balance of acidity, smokiness, and flavour. It's really good."
Grace (tasting): "You wanted to take me to Mexico, to the beach, and this is what it is. Beautiful plate food."
RESULT: Gareth was awarded one of the two Signature aprons.
