Connie lives in London with husband Mike and has worked for the NHS for 20 years. Her homage to the Caribbean uses Dragon Stout, a traditional Jamaican stout, in a bundt sponge covered in rich chocolate ganache and served with fresh mango. {Connie}: "This is fresh mango. I am baking a Dragon Stout cake, which is a homage to the Caribbean." {Connie}: "This has got Dragon Stout in it. It's a very traditional Jamaican stout." Asked by Alison about picking mangoes in Jamaica: {Connie}: "It used to be my mom's front garden. Used to wake up in the morning and go and get the mangoes off the tree. Nothing like it." {Connie}: "I'm going to leave it for five minutes, trying to make sure I stop it from sticking." {Connie}: "This is the chocolate ganache." {Connie}: "Every time I've done it, it's stuck." {Connie}: "Put some mangoes around the sides."
{Nigella Lawson}: "When I look at your cake, I just smile. I don't think you can look at that without smiling." {Paul Hollywood}: "Flavor wise, it's fascinating." {Nigella Lawson}: "The Dragon Stout gives a kind of licorice taste." {Paul Hollywood}: "But I think it's slightly overbaked." {Nigella Lawson}: "When we all make a bundt cake, the tendency is to leave it a bit longer because the fear of the unmolding seizes one."
