Piped Viennese biscuits shaped as elephants, iced and finished with melted white chocolate tusks. A tribute to baking with her aunt as a child. 


Emma: "I am going to attempt to create elephant Viennese biscuits." On the bite she wanted: "Buttery, a little bit crumbly, like if you dip it in your tea, you might lose it. Just a quick in and out." 


Emma: "I used to bake Viennese fingers with my aunt when I was a kid. So it is a nod to Auntie Wynne." On decorating: "This is white chocolate that I have melted. I am trying to do some tusks." She worried they were fragile: "Oh, I have just dropped an elephant. They are too brittle."

{Judge}: "I think they are beautiful." Paul noted a slight loss of piping definition and advised chilling the dough before baking to hold it, but Prue felt the softer look suited the elephants. 


{Judge}: "Your tusks have set." On texture, the sandy, shortbread-like crumb was correct: "They are sandy, but they should be sandy. It is like a shortbread." 


Verdict: "Wonderful." / "I love these. They are beautiful." 


Emma received a Paul Hollywood handshake: Emma: "My hand is still warm from Paul Hollywood shaking it."
