Ferdinando's quarter-final starter: a deep-fried egg yolk in breadcrumbs on a Parmesan cheese sauce, inspired by Vesuvius - the volcano that overlooks Naples. The egg yolk was blast-chilled, coated in pangrattato breadcrumbs, then deep-fried so the inside remained runny like lava. The judges were intrigued by the technique but worried about the double-richness of the parmesan cream alongside a yolk.

Tony Rodd: impressive that he managed to pane and cook an egg yolk and serve it runny, but the Parmesan sauce doesn't taste of anything; he doesn't know whether to eat it with a fork, spoon or straw. 


Simon Wood: blinded by a vision and can't see the wood for the trees. 


John: a perfect example of style over substance. 


Anna: all she can feel is wet. The dining room agrees - they do not enjoy this dish.
