Victoria knits, using the quiet time to dream up new flavour combinations. Her tatin is a daring mix of figs, walnuts and pink peppercorns. Victoria: "I tend to like just a trace of a flavour, and Paul and Mary like flavour with a big F, so I'm doubling up the amount I'm putting in." On the peppercorns: Victoria: "They are dry, but interestingly when you crush them they're still quite soft inside." At turnout: Victoria: "Has everybody else brought theirs out?"
Before baking: Mary: "They're not like black peppercorns, not infused in anything." Paul: "Good luck. I'm looking forward to seeing how those peppercorns come through against the figs." After tasting: Paul: "Lots of colour. But does that colour then mean lots of flavour?" Mary: "I can see that pastry is not done. That doesn't really work for me." [NOTE FOR JO: this final tasting cluster is attributed to Victoria by elimination, as hers was the only tart not identified by flavour during the tasting; please confirm or reassign.]
