Five-Spice Brownie with Black Sesame Cream, Lemon Caramel and Black Vinegar Cherries 


{Daniel}: "I'm doing a five spice brownie with black vinegar cherries, a black sesame cream and a lemon caramel. During Chinese New Year, black sesame balls are a popular dessert, and every summer my grandfather and I would eat cherries and see who could spit the pit furthest." 


{Daniel}: "I browned it with butter so I could bloom the spices and give it more flavor."

{Gordon}: "I'm just disappointed with you, because it's a brownie, and it looks like a brownie from a bake sale." 


{Judge}: "That's a no. It is absolutely solid." 


{Judge}: "There is such a fragrance of raw Chinese five spice, and everything else is just noise on your palate. It's not working." 


{Judge}: "You have a very intense chocolate brownie, the black sesame, then caramel which is very rich. I want more of a balanced dessert." 


{Judge}: "You don't follow the rules, and when you don't, you're either brilliant or you bear the consequences." 


In deliberation: "80 minutes for a chocolate brownie, not good enough in concept. He started off making the wrong thing, it wasn't elevated and it didn't work together."
