Frangipane Tart with Fennel Pollen and Blackberry Ripple Ice Cream 


Jun: "Making pastry now. Going to get egg." Jun: "It's frangipane tart with blackberry and blueberry jam. On top is fennel pollen and blackberry ripple ice cream and a little bit of compoted berries on top as well." Jun: "I did two sweet pastries in five minutes." Jun: "Looking at my dessert, it's lacking a few components. I might do a blueberry and ginger sauce, like a really thick gingy sauce. But does ginger work in there? Who knows? It's happening." Jun: "Then I'm going to separate it, have some stewed berries on top." Jun: "This is the ripple ice cream." Jun: "I think to get to the next round, it has to be the best frangipane tart ever made in the world. I did the jiggle test, and it didn't jiggle. I might not jiggle because it's so full. Smells good, at least." Jun: "I'm walking now." At the pass, Jun presents with blueberry and ginger sauce, fennel pollen and blackberry ice cream, and stewed blueberries. Jun: "Yeah, very happy. I feel like it blind baked really nicely." Jun: "I'm happy with the ice cream consistency and the taste." Jun: "I might have overfilled it with more jam than frangipane." Jun: "No." (when asked if he sees this at the banquet) Jun self-scored: 5.

VETERAN ROUND: Adam: "This dessert sounds like a pub dish. Jun needs to make the best frangipane tart for me to score it really high." Adam: "Jun's blueberry and ginger sauce was delicious. If the rest of his components on his plate taste as good as that sauce, it could be a good dessert." Hannah: "The pastry for me is a bit short and crumbly." Narrator: "I'm a bit confused by this ice cream. I was expecting a bigger rocher. Just nice and cold." Orry: "I think he could have almost put the ice cream in a side dish." Adam: "You think the almond frangipane, do you think it's coming through enough?" Orry: "Probably try and get more frangipane into the tart because it's kind of like dipped in the middle slightly where he's actually put his ice cream." Orry: "It's almost something that you'd maybe have with a cup of tea or coffee in the afternoon." Peer scores: Narrator 7, Orry 6. Adam final feedback: "Jun, for your dish, your late addition of the blueberry and ginger sauce was delicious. It added a real warmth to the dish. The ice cream was too heavy on fennel pollen. I thought your pastry was thin, buttery, nice and short. However, you promised me a frangipane tart. The whole thing felt flat because there wasn't enough frangipane, and all I can taste was berry jam." Adam's score: 5. JUDGING ROUND CHANGES: Jun added more frangipane to address the filling issue. Presented sharing style. Reduced fennel pollen. Increased ginger sauce. Ice cream still had setting problems on the day. Jun: "Not enough frangipane. Too much jam. Fennel pollen ice cream was too much. The ginger sauce was good. So I'm just doing a little bit more of that." Jun: "They're looking filled, so that was one of the feedback points, not enough frangipane. I've made it so it's filled with frangipane, so hopefully it keeps its shape so it's nice and domed." Jun on ice cream: "Toddler can make better raspberry ripple ice cream than this." JUDGES FEEDBACK: Catherine: "It's a very good likeness. I do love the blueberry and the ginger, though. What a nice balance, because it's not too strong ginger. But it's really lovely." Lorna: "All I can taste is fennel pollen. And the ice cream, just a bit too strong." Tom: "I like fennel pollen, but I have to agree with Lorna. The fennel pollen is really punchy. It's very strong. It's quite overpowering. The sauce is very nice. The tart itself is lovely. I love something freshly baked straight out of the oven. But it feels a bit homely. Feels a bit like a farmer's table. It's just not really tied in together." Phil: "I like the fennel flavour. I think it's not too over. I think you just need some more blueberry." Lorna: "The pastry is good. I think the tart really does taste fantastic. I think it's a great tart." Tom: "You talked about that chocolate mousse not feeling like a dessert. This definitely doesn't feel like a dessert." Tom in final remarks: "I want to know who cooked the spell cake. There's something very special about something freshly baked coming out of an oven. I loved it very much. And frangipane, I just love it."
