Frankenstein Beef Pie with Red Wine Gravy, Carrots, Fennel and Cheesy Horseradish Mash Narrator: "First up, comedian Joe, whose love of horror films inspired his Frankenstein beef pie with red wine gravy, carrots, fennel and a cheesy horseradish mash." Joe: "I love horror films. I like being scared. So my signature dish is called Frankenstein's pie because it's got a bit of everything in it. Beef, some mushrooms, onions in it. Going to have a lot of garlic. Basically going to keep away the werewolves. I'm not measuring it, I'm just sticking it in. If you don't have a plan, then nothing can go wrong. That's the way I look at life." Joe: "It's called Frankenstein's pie. You can't do it without blood." Joe: "It's coming from my brain. I love making stuff up as you go along. And out of chaos comes order. At the end of it, I'll be going, 'It lives!'" Joe: "Filling the pies now." Joe: "Okay, pies are going in the oven." Joe: "I've got to try and make it look pretty, even though it's Frankenstein's pie." Joe: "Thank you for your critique. I loved it. I shall take this away now and I shall back away slowly, with my dignity intact." Joe: "Grace said these things shouldn't work, but they do. That's a bit like me. I shouldn't work, but I do."
During the cook: Grace Dent: "It's got fennel, it's got stilton, it's got truffle oil. I am all about big flavors, but some of them don't seem to go together." Giorgio Locatelli: "It's a lot. I think those injuries are because that chopping board is chaos. I read that you have 32 different ingredients. So where is this dish coming from?" Grace Dent: "A great pie should be like a hug in a pastry blanket. Joe's going to have to make all of those ingredients work together, and I am expecting something welcoming, delicious." Giorgio Locatelli: "His pastry needs to be firm enough to hold the pie together, but it must be nice and crispy as well. I'm worried this is going to be just a scary mess." Verdict: Giorgio Locatelli: "I was very worried the pastry wouldn't cook enough and the whole thing would collapse. It didn't happen. You have a very nice color at the top." Giorgio Locatelli: "I can taste each one of the 32 ingredients in it. The smell is pleasant. I love this juicy gravy. It's really nice and spicy." Grace Dent: "Joe, I've never seen anyone cook beef like that. Cutting it up with scissors and then flinging it into a pan that was cold. It was always going to be quite chewy. But weirdly, the contents of this pie do work. When they're all together, there's a wonderful richness." Giorgio Locatelli: "It's a very comforting dish." Grace Dent: "This food is full of heart. Has it got finesse? Make it more beautiful." Giorgio Locatelli: "Your mantra should be less is more." Deliberation: Grace Dent: "Joe Pasquale. Oh, my gosh. That list of ingredients." Giorgio Locatelli: "I think he can cook. I just would like him to really take into account his idea of less is more."
