Kamay: "I blended them, and then I strained them, and then I let it simmer with some aromatics and habanero."
"This cook did a great job of elevating traditional flavors. Please come forward, Kamay."
"So can you please tell us what you prepared and how this relates to your childhood?"
Kamay: "In front of you we have a crispy chicken thigh with a Haitian red bean sauce, white rice with pickled fresnos, and red onions. When I was growing up, my mother would just fry the chicken instead of the traditional stewing, and I've elevated it now with the topping and the rice flour in the coating of the chicken."
"Kamay, it looks delicious. Really delicious. And the crispness of the chicken is second to none."
