[Signature challenge: baked cheesecake inspired by a family favorite, baked with a relative]

Yannis and his relative made a German-style baked cheesecake using quark, a low-fat fresh cheese, with a little cream cheese added for smoothness, topped with homemade fig jam made by his mum and white chocolate given a honeycomb look with bubble wrap.

Yannis: "I'm happy that we're making a cheesecake."

{Yannis}: "If this is not liked, it means my mom's jam is not liked."

Yannis: "Which is why I'm cheating a little bit. I am using a bit of Philadelphia cream cheese today."

Yannis: "The bubble wrap gives white chocolate that honeycomb appearance."

Yannis: "This is the trick to the cheesecake. You need patience."

Yannis: "We made a German-style cheesecake by using quark cheese. We've done a fig jam."

Nigella (during the bake): "You need to be careful when you bake the quark, because you haven't got the fat. So the texture can lack the smoothness."

Paul: "Love the filling. It's very delicate."

Nigella: "Yes. The cheesecake part is really lovely. You get the tang. I don't know that I like all the little pips of the fig."

Paul: "Overall, I think you've done a great job. Design-wise, excellent."
