[Signature challenge: baked cheesecake inspired by a family favorite, baked with a relative]

Connie and her husband Mike made a ginger and lemon Basque cheesecake topped with two fans of thinly sliced poached pears, one to represent each of them.

Connie: "Well, that's why we've got them draining. And then Mike expertly is going to cut them." (on the pears releasing liquid)

{Mike}: "I'm going to slice them very thinly and then hope for the best, basically."

Connie: "There's no hoping for the best, baby. No hoping."

Connie: "We're cooling it at room temperature."

{Connie}: "Take it out the fridge. Be really gentle with it."

Nigella (during the bake): "You've got to be quite careful, I suppose. They have quite a lot of liquid." (the pears)

Paul: "I like the fan of the pears. I think you've done a good job there, Mike."

Paul: "Overall, I quite like the appearance, to be honest."

Nigella: "The floral quality of the pears really does go well. But I think it might have been better not to have them, adding more liquid."

{Paul}: "Because of that addition, it affected the overall texture."
