Gluten-Free Ginger Beer Soda Bread
Peter's sweet gluten-free soda bread flavored with ginger beer and green ginger wine, using xanthan gum as a binding agent alongside bicarbonate of soda. Made in honor of his gluten-intolerant brother Andrew.
Paul: 'The loaves are great. It's very brave to take the gluten free option... I love that. I think the texture is beautiful.' Prue: 'It's difcult though, isn't it? It's falling to bits a bit and then it gets gluey in your mouth... It's very cake like, though, isn't it? I just think it's a little bit stodgy. I think the favors are delicious. Your favor is normally spot on.' Mixed response - great flavors but textural challenges.
