Goat's Cheese Mousse in Truffle Honey Jelly with Honey Cake Tartlet and Golden Beetroot Sorbet.
Luke asked his wife Katrina to set the brief for his dish: "I actually asked my wife to give me a brief for today. She chose goat's cheese. I thought it was a fun way to incorporate her and for her to have her stamp on my part in the competition. In years to come, that could be her claim to fame, if it goes well." {Judge}: "I like this." Luke continues: "My wife, Katrina, we've been together now for 14 years. One of her favourite ingredients, goat's cheese. When we're going out to a restaurant, we look at the menus to see if they have goat's cheese before we go there, because yeah, she is a big fan of it, and she also has quite a sweet tooth. So I've sort of turned it around a little bit into a sweet, savoury dish." {Judge}: "We've got a goat's cheese mousse. He's gonna roll that in a honey truffle jelly. That's a nice, strong flavour. Obviously, goat's cheese and honey works very nicely. Truffle element is quite punchy, quite strong. So he's got to be quite delicate with that." {Judge}: "Luke has got a tartlet case, which he's serving a honey cake inside with the flavours of the truffle honey running through it. Quite clever." Luke: "And then I'll be finishing that with freshly grated goat's cheese. Just to bring another element of goat's cheese to the dish." {Judge}: "I've also got a golden beetroot sorbet. Now, there's a first. It's going to be the balance between an earthy, savoury vegetable and the sweetness of a sorbet." Luke: "I do cook like this quite often with my tasting menus. I've not been as adventurous in the MasterChef kitchen, but I'm starting to feel a bit more confident." The completed dish: a goat's cheese mousse encased in truffle honey jelly, a truffle and honey cake tartlet topped with grated goat's cheese and truffle figs cooked in port syrup, and a golden beetroot sorbet.
{Judge}: "Beautiful looking plate of food. The saltiness of the goat's cheese mousse with the sweetness of the honey, and I think the right balance of truffle oil there in the jelly, it just blows you away." {Judge}: "The tartlet is wonderful with that delicious little honey cake alongside that beautiful goat's cheese. The sorbet is refreshing. It's got that earthiness of the beetroot. I think it's really out there, and I think it's really brave, but I think you've absolutely nailed it." {Judge}: "When we talk about next level cookery, this is it. I don't know what's happened to you since you've been up to Scotland, but I can't speak highly enough about this dish. I think I'd be sitting in a top two star, three star Michelin restaurant in Europe. That's how good this dish is." Luke responds: "I weren't expecting such high compliments." In deliberation: {Judge}: "I have a chef of the day. Luke with his goat's cheese, honey and truffle. The sweet, the savoury, that slightly earthiness of the beetroot. The whole dish was just brilliant."
