Goat's cheese, potato and thyme Ukrainian dumplings (vareniki) served in a chicken, mushroom and yeast extract broth, topped with gremolata.
Larissa: "I was very lucky that I've grown up with various cultural influences in my life and it's meant that I've learned to mix in flavours, not really follow the rules."
Larissa: "What's cooking I'm making for you today: goat's cheese vareniki, which is essentially a stuffed Ukrainian dumpling. But I'm doing it a very non-traditional way, putting my own little twist on it by serving it in broth and topping it with gremolata."
Larissa: "Ukrainian food I would say is comfort and unfussy."
Larissa: "My grandmother. She sort of communicated with food. It's all about bringing people in and neighbours and this just has such fond memories for me."
Larissa: "I added the teaspoon of yeast right at the end and then didn't try the broth. So feeling a little bit disappointed."
Grace (during cook): "What I want is beautifully puckered, soft, light, moist goat's cheese filled dumplings."
Anna (during cook): "The broth with dried mushrooms, yeast extract and miso. These are three very big flavours but too much yeast extract can really dominate and spoil the flavour of the broth."
Anna (tasting): "Your vareniki dough is beautifully thin, very nicely made, just cooked, and has encapsulated your goat's cheese and your potato mix. And the flavours are wonderful in the making."
Grace (tasting): "The broth is so yeasty, it is overpowering the goat's cheese. I would have liked a slightly more subtle broth."
