Jonathan: "For me, this dish is going to be all about technique and maximum flavor because I'm going against a killer. I'm going against one of the best, Karen Akunowitz." 


Jonathan: "I'm going to make a sauteed lamb shoulder blade steak, glazed in gochujang, shoyu and black garlic." 


Jonathan: "The goal of this marinade is sort of threefold. We're going to intensify the lamb flavor. We're going to tenderize it, and we're going to also add complexity through that umami. With a lamb shoulder, you got to break down the tendons and the sinew. Pounding it paper thin with a meat mallet." 


Jonathan: "All right, meat is tenderizing. Let's saute some bones to fortify that broth." 


Jonathan: "We're gonna make a potato puree, something smooth, creamy to go underneath. To maximize my potato points on the randomizer, I'm gonna slice some purple potatoes to get the least oily chip. They have to be paper thin." 


Jonathan: "Starting the rice. There we go. Got to get meat in. This dish is all about technique and maximum flavor. And give me maximum points." 


Jonathan: "Just like that, the lamb is cooked. Even though plating's only 10 points, these judges eat with their eyes first. You have to nail plating." 


Voiceover: "You have marinated and sauteed lamb shoulder chops with a fingerling puree and fingerling chips with lamb fat, sauteed shallots, and sauteed lamb bone jus. The white fingerlings were peeled and cooked, then sent through the ricer."

{Judge}: "I have no doubt that Jonathan made an awesome dish. I feel transported to another place." 


{Judge}: "I like how the lamb shoulder was treated. I think that's a very hard piece of meat. This is technique all day long. Fingerling potatoes, ricer, of course, we're going to go mashed. But the fact that they took the sort of beautiful red ones and slivered them and got them so crisp, and there's no, like, remnants of oil. It's delicious." 


{Judge}: "The only thing, my lamb kind of did not cook all the way, so the fat was not melted."
