Tristen: "I'm working with yellow rice. I'm going to attempt to make a yellow jollof rice. Jollof rice is a staple of West African cuisine. It came up into the American south during the transatlantic slave trade. I'm using a pressure cooker. It's the only way to make rice in this amount of time properly."
