Chef Laura: "I picked Gouda. It's amazing. It's very nutty. Lots of crystals in it, so it's delicious. And I think it's perfect with the croquettes."


Chef Laura (presenting to judges): "I picked this beautiful Gouda Reserve that's been aged. I'm using the idea of a moustarda potato."

"The nuts and the gouda, super mild and super delicious. They go really well together." 


"I think the texture of it, I think it had too much roux. I mean, the base of it, we weren't getting the cheese."


"And I think this was supposed to be a mustarda. I got zero mustard. I got no spice out of it at all."


"That (mustard) would have been a great base for that croquette. A real moustada."
