Retired from a career in textiles, Gary runs a smallholding in Nottinghamshire with Donna, his wife of 30 years. His cake celebrates his uncle Gordon's love of Guinness, with a Guinness sponge, whiskey chocolate ganache and an Irish cream Swiss meringue buttercream finished with scalloped piping. His secret ingredient is mayonnaise in the sponge. {Gary}: "In the sponge it's Guinness. I've got chocolate ganache and that's got whiskey in, and I'm doing buttercream and I'm putting Irish cream in that." {Gary}: "This is mayonnaise. You don't taste it, it just gives it nice texture. Yeah, it does make a big difference." {Gary}: "I used to go to the pub with him as a young lad. I used to have a glass of ale and he'd have a pint of Guinness." {Gary}: "Cakes are in the oven. I'm on with the Swiss meringue now." {Gary}: "Critical time, this now. I've got 25 minutes. The only problem is it's a little bit warm." {Gary}: "Oh, no. The cake's cracking. It was looking good and it's all gone wrong. Yeah, it's too warm. Can't believe it." {Gary}: "I can't believe it. Honestly, I underestimate myself sometimes, but, yeah, this is a lesson learned for me."
{Nigella Lawson}: "I love that scallop waistband." {Paul Hollywood}: "When you're doing detail that small, you have to be extremely accurate with a very cool cake. Your cake wasn't cool. So you were rushing and then things started falling apart." {Nigella Lawson}: "I love the taste." {Paul Hollywood}: "Those cakes are absolutely delicious. I mean, it's almost mousse. It melts in the mouth." {Nigella Lawson}: "Flavor wise, it's really good." {Paul Hollywood}: "That's probably the best cake here, I'll be honest. Good job."
