A haddock fillet wrapped in Irish dulse seaweed, served with a chowder base built on fish stock infused with lemon, fennel and star anise, garlic and onion sweated off, cream added with bacon fat, and finished with braised cabbage. A champ potato bread (second proof risen, baked until hollow sounding when tapped) is served with a whipped bacon butter. A drizzle of leaf oil finishes the chowder. 


Marion had to restart the cabbage when her first attempt failed. 


Marion: "I'm starting with the champ bread here. So now cover this and we'll have our second proof." 


Marion (on fish choice): "I'm using haddock. I know haddock traditionally cooks quite quickly. I will wait until the last minute. So I'm doing a fish powder, which is very traditional Irish food. I'm using champagne. So just to bring a little bit of French touch in it." 


Marion: "Fish stock here. A little bit of lemon for freshness, some fennel and a bit of star anise just to infuse." Marion: "I'm going to whip some butter and add the bacon in it." Marion (on the bread test): "When you tap it needs to sound. Hello." Marion (lost first cabbage): "My cabbage is less fine. That's okay. I'll do another one."

Jean Del Port: "I really liked the 50 shade storytelling. It was playful, interactive, but elegant all at the same time. Unfortunately, you started your cooking and your fish just way too early, and it almost felt rubbery on the plate. Your chowder was completely overpowered by the acidity that you added at the end. The smoked bacon butter tasted really good, but it got lost on the fish." 


Jean Del Port: "There were some problems on the plate, but you really evoked the spirit of that film." Peer comments at the pass: Marion self-scored 7, acknowledging too much lemon, under proved champ bread, and overcooked fish. Lawrence: "The fish was overcooked. The bacon butter is lovely. The bread was really delicious. I'll give it a 7." Callum: "A lot of flavour in there. The bacon adds a nice bit of saltiness. High 7." Kristen: "Going to be a 7."
