Ham with Mojo, Black Bean & Hush Puppies
Anthony: "Ham is a cut they don't even want anything to necessarily do with. I'm just hoping that if I can cover the portions in enough fat, I can try to avoid that dryness." Anthony: "I gotta hit it with some mojo on the side to balance out the dryness of the ham. Black bean puree, and then some hush puppies." Anthony added mango to his escabiche for sweetness.
Presenting: Anthony: "I wanted to do mojo black bean puree, oranges, and hush puppies. The white sauce is Carolina white."
RESULT: Anthony loses the individual ham round to Jennifer, but is safe as part of the winning red team.
{Michelle}: "I love this moho Cuban kind of feel. Got a great plate of food here."
(Michelle voted for Anthony, though Jennifer won the round overall.)
