Buddha Lo: I've got hamachi crudo with smoked hazelnuts, carbonated grapes, pickled turnips, and walnut oil. The carbonated grapes did not land as intended. Buddha: No one's safe. It's all about technique and strategy. If you put 10 techniques on a plate, you're available to 300 points.
Padma Lakshmi: Unfortunately Buddha, slicing your grapes took the carbonation out of them. Note: when carbonating a whole piece of fruit, cutting it releases the absorbed CO₂ immediately. To preserve the effervescence, serve carbonated items whole or portion just before plating.
