James takes on the controversial Hawaiian pizza, attempting to upscale the classic with pancetta instead of regular ham. His dough combines strong bread flour with spelt flour for a nutty flavor. He grills the pineapple and uses pancetta to elevate the traditional combination, describing himself as very much a firm believer that pineapple belongs on pizza.
Paul: You promised us an upscale version of ham and pineapple. I think you've done it. I just think it's a little bit too dry. You need more tomato. Prue: Probably could have added a little bit more water to your dough. And just to allow a bit of fluffiness to it, there's no rise. Surprisingly bland.
