Hazelnut Mocha Latte Cakes

Rebs: " I'm making hazelnut mocha latte mini sandwich cakes. Because I used to work as a barista and it's the drink my now boyfriend used to come in and order all the time when he was trying to chat me up."
Voice-over: "To bring the hazelnut flavor to her coffee cakes, Rebs will add chopped nuts to both her caramel filling and highly caffeinate marinated sponge."
Rebs (later, cooking) "This is hazelnut caramel, but I'm a wee bit concerned cuz it's a bit runny. Probably put too much butter in."
Judging
Prue Leith: "Looks like your caramel was a bit runny."
Paul Hollywood: "There's enough coffee in there to keep you awake at night. The other flavours are not strong enough to compete with it. And the ganache is too hard."
