Herb Crusted Lamb with Vegemite Infused Jollof Rice and Fried Plantain
Joe Bastianich: "Okay, so we have Nigeria and Australia. What dish are you making today?"
Rita: "I am making jollof rice and I am also infusing the vegemite in it."
Joe Bastianich: "Have you ever eaten vegemite before?"
Rita: "No."
Joe Bastianich: "Have you ever smelled it?"
Rita: "No."
Joe Bastianich: "It is super dense. It is very caloric. Very rich in nutrients. It is a very particular flavor. So you are going to put this in jollof rice?"
Rita: "Yes."
Joe Bastianich: "What is the protein you are going to use?"
Rita: "I am doing lamb."
Joe Bastianich: "So make sure you render the fat, but you want to make it medium rare, right?"
Rita: "Yes."
Rita: "I do not think it is cooked right now. I am feeling stressed. I cooked my lamb for twelve minutes already, and it is still not cooking fast enough. I do not understand this. Time is running out, and I cannot serve uncooked lamb to the judges. If I do, I might be going home."
Rita: "My lamb is just scaring me. I checked my lamb, and my lamb is uncooked. Time is running out. I am gonna cut it and sear it."
Rita: "Jollof rice, but I fused it with some vegemite."
Rita: "I am really disappointed with how I performed tonight. I am really worried that the lamb may send me home. Tonight I made a herb crusted lamb with jollof rice infused with vegemite and fried plantain."
Joe Bastianich (during the cook): "Rita is doing kind of like a classic herb crusted rack of lamb, which would be Australian. And then, of course, for Nigeria, she is making jollof rice. Actually, if you think about it, lamb and jollof rice together, it could be excellent. It is just that the lamb needs to be a perfect medium rare. If she can pull that off, I think that sounds like a winning dish."
Gordon Ramsay: "It is a very strong extract." (on the vegemite)
Joe Bastianich: "If I remember correctly, your audition dish was jollof rice in a risotto version. So you are familiar with the idea of fusion. I think visually, this dish does not capture the essence of a Nigerian and Australian fusion for me."
Gordon Ramsay: "So let us deal with the elephant in the room. The lamb was undercooked. You sliced it and then threw it back in the pan."
Gordon Ramsay: "First of all, the lamb is very dry. I think you panicked by not letting the lamb rest. It does continue cooking, by the way."
Tiffany Derry: "I am being honest here. The best part is the plantains. Everything else just needed to be technically right, you know, at this level of cooking. Rice, it has that spice, but it just does not have a whole lot of other flavor."
Joe Bastianich: "We expect you to be able to not only interpret a challenge and do what we are asking you, but also cook properly. I am sorry to say, maybe it is a little tough love, but this dish is a little bit immature."
Gordon Ramsay (in deliberation): "If you are going to cook a rack of lamb, let it rest for twenty minutes. Tonight she just missed the mark completely."
Result: Bottom dish for team Africa. Eliminated.
