Hogget Tartare with Preserved Cabbage and Anchovy Mayonnaise

Nicholas describes his canape: 'This is a hogget tartare with preserved cabbage dressed in anchovy mayonnaise.' During preparation, he focuses on balance and portion sizing: 'I just want to make sure I've got that balance. Also want to try and get the sizing right, because one bite for me might not be one bite for someone else. I think I've got quite a big mouth.' Nicholas is making a mayonnaise by mixing anchovies, garlic, and thyme. He expresses confidence about having Michael Caines as veteran: 'Feeling really good about having Michael Caines as a veteran. Actually got tons of experience in the industry, achieved so much.' Nicholas notes Michael is 'a titan of the industry, particularly in the southwest. I feel like he's the generation above me. Two generations above everyone else in the kitchen.'
Michael Caines ranked Nicholas first, saying: 'Nicholas came first because it's a really interesting tartlet. Good representation of the region. Lovely flavors coming through, and just a little bit different.' Amber comments: 'That pecorino with the hogget. So beautiful.' Ashleigh: 'Really tasty.' Joe: 'Tender as well, isn't it?' Michael notes: 'Very, very close. This is going to be great competition because everybody did a really good job.'
