Nicholas: "I just want to, like, make sure I've got that balance. Also want to try and get the sizing right, because one bite for me might not be one bite for someone else. I think I've got quite a big mouth.

Nicholas: "This is a hogget tartar with preserved cabbage dressed in mayonnaise."
Michael Caines: "Nicholas came first because he had a really interesting tartlet. Good representation of the region. Lovely flavors coming through, and just a little bit different."
