Honey and Apricot Ginger Cake

Briony's honey and ginger sponges were decorated with dark chocolate ganache and honeycomb and filled with apricot jam. The frosting was honey buttercream. There was both fresh ginger and ground ginger in the sponges.
Judging
Paul Hollywood: "It looks fantastic. Lovely looking cake. Unfortunately, the apricot tends to be the overwhelming flavour. Honestly, apricot and ginger doesn't necessarily work well together.
Prue Leith: "The chocolate is really shiny, but the cake is very dry and didn't really taste of honey, nor was it very sweet."
