Honey and Meadowsweet Sorbet

Calum: "So I'm about to put together my infusion for my gel. My inspiration is another poet from the Isle of Skye. Her story ended up taking her to becoming an amazing poet and a voice for the people."
Calum: "I'm making a little crowdie, which is like a Scottish cheese and I'm making it into a sorbet, and then a little honey and meadowsweet, I'm just going to make a quite simple foam with that. That's going to sit on top of the sorbet and then a little spiced tuille."
