Who made this dish?

Calum: "So I'm about to put together my infusion for my gel. My inspiration is another poet from the Isle of Skye. Her story ended up taking her to becoming an amazing poet and a voice for the people."

Calum: "I'm making a little crowdie, which is like a Scottish cheese and I'm making it into a sorbet, and then a little honey and meadowsweet, I'm just going to make a quite simple foam with that. That's going to sit on top of the sorbet and then a little spiced tuille."

Notes taken during cooking

Calum makes a spiced cinnamon, nutmeg and ginger tuille.

Aktar Islam: "I'm getting honey, lots of it. It's really strong.

Peers, tasting behind the scenes

"That's lovely."

"It's refreshing. It's quite dry in the mouth at the same time. It's funny."

Aktar Islam:  "When you get a nice mix of the cheese and the honey foamy thing. That's actually quite good."
