Paul: "We've got an incredible honey producer up in Penrith, so shouts about them. I'm going to marry it with yogurt and some sea buckthorn." Paul: "A bit of texture in there. Some toasted oats which have been toasting with honey. A little bit of salt in there as well, just to try and lift it. And then just some of the honeycomb at the bottom." He shuns the soft-serve machine in favour of making ice cream droplets using liquid nitrogen. He finishes the dish with bee pollen and the honey ice cream droplets. Lisa noted the difficult ingredients: "Quite difficult things to work with. Sea buckthorn, honey..."

Lisa tasted the pre-desserts blind and ranked Paul's dish first out of three. Lisa: "That actually is quite an exciting eat. Every bite is different." The narrator noted: "Very successful, I think, don't you? It's quite nice, that one." Daniel: "Like a posh granola bar." Paul: "I've eaten all of it." Lisa: "I'm not far off." Lisa correctly identified all three chefs from the blind tasting. 


FINALS JUDGING -- Changes: Put ice cream into a drink-like texture for different presentation. 


Tom: "Slightly underwhelming for me. Normally when you have sea buckthorn, I'm waiting for this punchy kick. It's not there. I love the honey, but I'm not quite sure it has the same taste impact as the first one." 


Lorna: "Yeah, it was all right." Debbie: "I like the crunchiness." 


RESULT: Unanimous win for Jack's pre-dessert.
