Indian Party Feast: Vegetable Samosas, Potato and Spinach Pakoras, Spiced Cassava Chips and Papdi Chaat, with Tamarind, Coriander and Mint, and Sweet Yogurt Sauces

Nitin Ganatra: "The celebration dish is quite important to me because I want to do something with meaning and heart. And having lost my mom and dad not long ago, I miss them a lot. So this one's going to be dedicated to my mom and dad."

Nitin Ganatra: "That's my mom and dad."

Grace Dent: "Oh, what would they say if they knew you'd got this far?"

Nitin Ganatra: "I think they'd be very proud of me. My dad loved experimenting with food. And my mum, she's that old-school generation where she'd be proud of me doing all of this by hand."

Grace Dent: "What you cooking today?"

Nitin Ganatra: "Samosas. I made samosas with my mom. Pakoras, onion bhajis and cassava chips. Celebrating family, celebrating my mom and dad."

Grace Dent: "I cannot wait to see how you arrange it. And I want to be part of this celebration."

Nitin Ganatra: "Thank you. Last time I messed up, so I've got to set a high standard."

Nitin Ganatra: "Need to be browner than that."

Nitin Ganatra: "We're gonna go a bit showbiz with this."

Nitin Ganatra: "I'm proud of myself. I'll get emotional, but in my own way, I fed my mom and dad today."

Nitin Ganatra: "Yeah, it was very cathartic for me."

Nitin Ganatra: "Every day I just think, that's me out. But I'm through, so I'm a happy man."

Grace Dent: "I really need the filling to have a beautiful texture, and it has to have a lovely bit of heat in the background. Pakora, if you give it too long, it just ends up incredibly dry. You've lost all of the beautiful flavors of the different veg."

Giorgio Locatelli: "He's also doing some mogo, which is cassava. Really interesting to taste."

Giorgio Locatelli: "This looks exceptional."

Grace Dent: "I think your samosas are just wonderful. You've got great al dente bite on all the veg in there. The spices are coming out. I think your cassava chips are really crunchy. Gorgeously fluffy in the middle. I love it."

Giorgio Locatelli: "The sauces are delicious, all three of them. I love the tamarind one. I think you've done an amazing job. Thank you very much. You take us to the table of your family for one moment."

Grace Dent: "For me, Nitin's dish was a triumph. We asked him for a celebration and he came with a story that was about his family and his heritage."

Giorgio Locatelli: "I could tell it was coming from the heart."

Result: "Through to the next round."
