Oscar gave the modest Moravian cake a makeover by reimagining it as capirotada, a bread pudding from his parents’ home state of Jalisco. The cinnamon and sugar topping on the Moravian was his cue. The pudding picked up raisins, plenty of cinnamon, a pasilla pepper powder for warmth, and a rum-spiked dulce de leche for the party energy. The whipped cream finishing the plate had been over-whipped and broken before service.
{Oscar}: "It’s like a Jalisco style bread pudding with the s’mores cook off. I loved a little spice in it, so I’m gonna make a little pasilla powder. Why not?"
{Judge}: "I liked it."
{Judge}: "Even the broken whipped cream on top."
{Judge}: "Do you see how thick he baked that?"
{Judge}: "I think the problem with Oscar is eating more custard. It wasn’t pudding, like, it was bread, like."
{Judge}: "I saw the pockets of unsoaked bread plus undercooked, soaked bread. Had you just made a smaller amount, it would have cooked more consistently."
{Judge}: "My big problem was your whipped cream was broken."
{Judge}: "Broken whipped cream. It’s just like, I don’t get that. It’s such a major fail."
{Judge}: "If I had to choose a dish that I would eat again, it would actually be Oscar’s. I really liked the flavors."
