Deconstructed Jamaican Brown Stew Chicken with Allspice & Scotch Bonnet Sauce
Stuart's signature, a modern take on his grandmother's recipe: a chicken breast with an allspice and Scotch bonnet brown-stew sauce (onions, garlic, allspice peppers, tomato), sweet potato puree, poached yam and a fiery Scotch bonnet chili sauce. The chicken breast proved tricky to cook evenly.
Judge: "You struggled with the cooking of your chicken breast - the outside is overcooked and the inside a little undercooked. But I quite like the sauce; it's got a nice balance of what you want a meaty stew to taste of."
Judge: "Lovely sweet potato, creamy and delightful. Your Scotch bonnet is fantastic, but your yam has had so long it's become mashed. You definitely had issues, but there are some good bits on this plate."
