Japanese Sushi Tasting Plate
Frankie's experimental signature: a tasting platter of katsu (tempura) prawn nigiri, a salmon and asparagus maki roll, and a spicy togarashi crab gunkan (seaweed-and-rice parcel), with a soy dipping sauce. She makes this at home roughly once a fortnight, but on the day her sushi rice came out looser than intended.
Judge: "Your gunkan, there's a lovely sweetness off the crab and the wasabi is also in there. Your prawn is very crispy, but your rice is loose, so I couldn't pick it up."
Judge: "Your rice hasn't behaved as it's meant to, but your salmon sushi roll, that is a delight - beautifully, pungently fishy. A little flavor bomb. Good effort."
