Jasminder's Fresh Mango and Passionfruit Hummingbird Cake
Jasminder: "Paul is just watching me. I'm just thinking, "oh, I wonder if they're looking at the way I'm doing it, if it's the wrong technique."
Voice-over: "Assistant credit control manager Jasminder from Birmingham regularly bakes for her colleagues. She's making a hummingbird cake with a twist. The classic version is made with banana and pineapple. Jaz is loading hers with mango and passion fruit."
Mary Berry: "There'll be an element of crunch in there?"
Jasminder: "Yes. A little bit of seed coming in just to give it a bit of more texture."
Paul Hollywood: "And where are you up to on the actual baking process?"
Jasminder: " I'm just chopping up the fruit and then once I've chopped up the fruit, trying to mash it as much as I can, then I'll just add the oil and the eggs and mix it and it'll be ready to go in the oven."
Voice-over: "By using so much fresh fruit, Jaz may have already given herself an advantage."
Mary Berry: "What you'll get is a normal cake with lots of bits in there. When you get it out of the oven, it will probably have quite an open structure because the moisture in the fruit as it expands in the oven will leave big air holes. So it should be a very, very moist cake. What I don't want to see on that is a dry cake."
Mary Berry: "Very, very moist."
Paul Hollywood: "You can taste what's going in layers. Mango, passion fruit, walnut. It's fascinating."
Mary Berry: "And then they haven't been all made into a paste so you can't recognize them. You can recognize the flavors as you eat."
Paul Hollywood: "Cuz that cake is fantastic."
