Matt: "What you have is pork secreto done jerk style — black bean rice. We have a pineapple relish over the top with some of the jerk seasoning just to kind of add a sweet-sour note."
Matt (context): "My rice got overcooked. Nightmare. So I have to get another batch going. My plan was to make a sofrito to season the rice with herbs, peppers, and garlic. But having to redo the rice, time is running out, so I have to pivot. I see that there's a jar jerk seasoning, and I use that to add more flavor to it. I'm kind of second-guessing my choice in Jamaica by taking it away from Chris."
"For me, Matt's dish is a little bit of a head scratcher. I can't really find fault from an execution standpoint. I think the rice is well cooked."
Kwame: "But if someone gave this to me and said, where do you think this is from? I wouldn't say Jamaica at all."
"You know, I thought Matt's dish didn't really taste like a dish from Jamaica, but it tasted maybe more like a dish that you would get on a cruise to Jamaica."
