Joe Wilkinson created carrot-shaped rough puff pastries filled with a chocolate orange ganache (dark chocolate, orange zest and double cream) garnished with fresh Japanese knotweed as the green stem. Edible eyes were applied to each carrot in a final whimsical touch. 


Narrator: "Shaped and glazed to look like carrots, but filled with a chocolate orange ganache." 


{Joe}: "I've got this Japanese knotweed that I picked fresh from the garden." 


{Joe}: "Not many people say they've mixed chocolate, the skin of an orange and double cream and made it sexy. Job done."

{Paul}: "I think the design is exceptional. I think they really work and what I do like when you look at them initially is the lamination. You can see the lamination in them." 


{Paul}: "Your pastry is probably five minutes from perfection, but actually, the flavor inside works well. I think you've done a great job. Well done, Joe."
